Braised mushroom with scallop, oyster, sea cucumber, chestnuts

This is a CNY dish that i learnt from my MIL. Her signature dish for the Chinese New Year.



My Easy Peasy Braised Mushroom
For 3 person share
Ingredients:
- 9 small dried mushroom (soaked),
- 2 dried scallop (soaked)
- 1 medium size sea cucumber (sliced)
- a handful of chestnuts (can use fresh or dried ones)
- some ginger (cutted into strips)
- 1.5 cup of water
- 1 tbsp of oyster sauce
- 1/2 tbsp of sugar
- 1/2 tbsp corn flour
Prep and Cooking Instructions
1. Stir fried the ginger with some oil.
2. Add in all the ingredients into the HCP , except the sea cucumbers
3. Let it boil until the chestnuts are soft and ensure water does not dried up
4. Last add in the sea cucumber slices and let it boil for 2-3 mins.
5. Stir in the corn flour mixture to thicken the gravy before serving.
Additional Comments About this Recipe
Pre-prepared: If dried chestnuts are used, please boil it 1st to remove the red shell in between the chestnuts.
