Dinner



J's lunch


At his request to have this potatoes dish with ham and cheeses for his lunch. I have added some chopped garlic and onions into it too.

Recipe adopted from Roasted Garlic & Bacon Potatoes:
3 Tablespoons of Olive Oil
200g back bacon
9 medium sized Holland Potatoes
2 bulbs of garlic

Peel and dice potatoes.
Peel and slice garlic thin.
Chop bacon into bits.
Mix all inside the HappyCall with 3 tablespoons of Olive Oil
Cook on small-medium fire for 10 minutes.
Flip the pan... another 10 minutes.
Open the pan. Turn the cubes around.
Cook on one side 10 minutes.
Flip and cook on the other 10 minutes.
No need to salt. Bacon is salty.


Victoria Queen Sandwich Cake
Had actually wanted to make swiss roll and hence I 1/2 the baking recipe of the spongecake to make a thinner layer of cake. But was unsuccessful in removing a nice piece of cake out from the Happycall pan successfully. Therefore decided to just layered the cakes with strawberry jam spread in between.

Mix fruit Spongecake

This is my bake for yesterday tea break and this morning breakfast


Recipe:
- 250g spongecake mix (I got from PhoonHuat)
- 5 eggs
- 50 ml water
- 50 ml oil
- dried fruit mixture 150g


Method:
1) Place spongecake mix, eggs and water together in a container and beat at high speed for 10 mins (I usually beat unit very light yellow less than 10 mins, I suppose depend on machine)
2) Add in oil and beat at medium speed for 3 mins
3) Add in the fruit mixture
4) Pour mixture into the pan
5) Ready to bake 1st the bottom then flip to bake the top (I tried 7 mins for bottom and top 4 mins, varies the cooking time according to your stove fire size. Mine on small-medium fire size)

Cake is cooked, but the top is not colour in brown and it didn't flipped down for the baking after I flipped the pan. So only the bottom part of the cake is brown in colour.


*REMEMBER
to move your HCP middle, left and right at the interval while baking to get an even colour. I did 3 mins centre, left 2 mins and right 2 mins.

Peanut butter Spongecake

My 2nd bake using DIY recipe. Nice cake with some peanut crunches in between the bite.



Recipe:
- 250g spongecake mix (I got from PhoonHuat)
- 5 eggs
- 50 ml water
- 50 ml oil
- 2 tablespoons of peanut butter (I got the chunky one)


Method:
1) Place spongecake mix, eggs and water together in a container and beat at high speed for 10 mins (I usually beat unit very light yellow less than 10 mins, I suppose depend on machine)
2) Add in oil and peanut butter
3) Beat at medium speed for 3 mins
4) Pour mixture into the pan
5) Ready to bake 1st the bottom then flip to bake the top (I tried 7-8 mins for bottom and top 6 mins, varies the cooking time according to your stove fire size. Mine on small-medium fire size)

Nutella Marble Spongecake

This is my 1st bake using HCP.



Recipe:
- 250g spongecake mix (I got from PhoonHuat)
- 5 eggs
- 50 ml water
- 50 ml oil
- nutella


Method:
1) Place spongecake mix, eggs and water together in a container and beat at high speed for 10 mins (I usually beat unit very light yellow less than 10 mins, I suppose depend on machine)
2) Add in oil and beat at medium speed for 3 mins
3) Scoop 2-3 tablespoon of mixture out into a small bowl and mix together with your desire amount of nutella to form a chocolate colour mixture.
4) Pour the 1st mixture into the HCP.
5) Add in the chocolate colour mixture by going around the HCP while pouring in the mixture.
6) Use a chopstick to stir around the chocolate mixture in the HCP

7) Ready to bake 1st the bottom then flip to bake the top (I tried 8 mins for bottom and top 6 mins)

Like the greenary? It was very soft the vegetables and yet it didn't loose the GREEN.

Happycall Ocher Deep Pan

Yes, this is the HappyCall Pan which I got.
Although we are only a family of 3, but I still got this deeper on, 2cm deeper compared to the basic pan. Just in case if I need to cook a bigger food portion.
Just being a KiaSu mummy.




What are the advantages of cooking with the Happy Call Pan? This is the question many of us asked.

-Cooks faster than normal wok or pan because of its patented heat retention technology as well as the fact that it's coated with titanium and ceramic (making it a non-stick pan as well)
-Because you cover the pan when cooking (there's a magnetic clip at the end of the handle that keeps the pan tightly closed), there's not the usual smoke and odor, thus leaving the kitchen almost grease-free
-Healthier cooking because you only need to use minimal amount of oil, or none at all if you prefer
-You can also cook on both sides with an easy flip of the pan, so some thing like frying fish becomes much easier
-Cleaning the pan is easier because of its non-stick property

Dong Fen Prawns cooking using HCP




Recipe:
Ingredients
 
1) 10 medium prawns
2)  Dong Fen (1 bunch)
3)  Some Garlic (diced)
4 ) Some ginger (diced)
 
Seasoning
 
1) 1 tablespoon of dark soya sauce
2) 2 tablespoon of soya sauce
3)  some stock /water
 
Marinate
1)  some sesame oil
2)  a dash of pepper
 
Cooking instructions
 
1) Marinate prawns with marinates ( i marinate for half a day)
2)Heat some oil in HappyCall
3) Fry the garlic and ginger
4) Add in the prawns and cook for about 6 mins (flip once in between)
5) Add in dong fen,stock and seasoning
6) Cook for another 1-2 mins
7) Ready to serve

Easy Peanut Pancake using HCP



Recipe:
150g      plain flour
1/2        egg
190ml    water
30g       sugar
1/2 tsp  yeast
1/2 tsp  bicarbonate of soda
 
Mix together and leave aside for 30mins.
 
 
Peanut spread
20g       peanut coarsely ground
15g       sugar (Or adjust according to taste)
Small amount of sesame seed (lightly fry and pound/press)
 
Mix together for a dry texture
 
OR
 
 
Mix together with some butter for a peanut butter texture
 
 
Method:
1. Pour batter into HCP, smooth out to get an even thickness
2. Cook on low heat for 6-8mins
3. Remove from pan, spread some butter and peanuts
4. Fold into half, slice and serve
 
Note:
- There is no need to flip pan, ensure that top is cooked and/or bottom is brown to liking. I moved the pan  to the left then to the right of the stove after every 2 mins to get an even color. 
- I usually estimate for the peanut spread, this is the original recipe
 
This yields a thick pancake like the ones sold at Jollie Bean. If you prefer a thinner pancake, pour half of the batter to make 2 pancakes or half the ingredients.

Easy Muah Chee using Happycall Pan



Recipe:
1 cup glutinous rice flour
3/4 cup of water
Mix well (watery paste)
 
Peanut coating
Peanut + sugar + sesame seed, finely ground
 
1. Grease pan with shallot oil (adds fragrance)
2. Pour in paste and cook on very very low heat for abt 3 mins
3. See that it has 'set' and roll together to form a lump
(using a fork, should be able to flick up the side and roll together easily)
4. Toss around for a while to ensure is totally cooked.
5. Remove and put onto peanut coating, cut to bite size.
